We gather the water lilies in our country when they are flowering . These are very good food - seed heads can be roasted and eaten and the stalks are eaten raw like celery.

We can also grind up the seeds to make flour for damper. This is how the old people always made their bread - grinding up seeds on a large rock - using a smaller stone to grind. You can still see the rocks with the hollowed out area where they did this.
